I am getting healthy in 2008, and I'm starting with eating better. I'm fixing recipes that look good to me,but making them a little more"figure friendly." I am eating only as much as I need to, not as much as I want to.

She saw this, and couldn't identify it based on the menu board. And the only thing on the menu board that she could not match with a dish was Potato Ravioli. Potatoes? Yes. Ravioli? No. But she recreated it at home, and a Carr Family staple was born. Add potatoes and let cook 5 minutes, stirring frequently. Add the rest of the ingredients. Add olive oil and garlic. Cook until fragrant. Transfer to plate and let cool. When cool, mix with olives and cheese. Set aside.&lt;br /&gt;&lt;br /&gt;Add 1 tbsp olive oil to the pan. Add garlic and onions. Cook 5 minutes, or until onions are soft. Add squash, zucchini, and fresh and canned tomatoes. Season with salt and pepper.  Cook until vegetables are soft, about 15 minutes. Stir in flour. Cook  over low heat 2 minutes, or until mixture becomes a paste, stirring constantly —  do not brown.  &lt;p align="justify"&gt; Heat chicken fat or butter in a large sauté pan set over  medium heat until hot. Add celery, carrot, onion, green pepper and red pepper.  Increase heat to medium-high; cook until onion is tender. Stir in corn,  mushrooms and jalapeno.  &lt;/p&gt;&lt;p align="justify"&gt; Cook until mushrooms begin to turn golden brown and shiny  wet, stirring frequently. Remove from heat.  &lt;/p&gt;&lt;p align="justify"&gt; Bring broth to boil in an 8-quart stock pot. Stir in butter  and flour mixture. Simmer until thickened, whisking to prevent lumps. Stir in  cooked vegetables, parsley, salt, black pepper, white pepper, nutmeg and  cayenne. Bring to a simmer, stirring occasionally.  &lt;/p&gt;&lt;p align="justify"&gt; Add chicken, rice and whipping cream. Mix sugar, cornstarch, and 1/2 cup water in 2-quart saucepan. Stir in fruit and lemon juice. Cook, stirring constantly until mixture thickens and boils. Boil and stir 1 minute. Pour into ungreased 2-quart casserole, keep fruit mixture hot in oven. Cut shortening into flour, 1 tablespoon sugar, the baking powder, and salt until mixture resembles fine crumbs. Stir in milk. Drop dough by 6 spoonfuls onto hot fruit mixture. Keep the pan moving until the sugar melts and the ingredients are all melted together. (Be very cautious, can burn easily). Pour mixture onto a greased sheet pan. Leave out to cool. When cool, chop into small pieces and add to salad.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Simple Balsamic Viniagrette:&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1/4 cup balsamic vinegar (or half balsamic/half red wine vinegar)&lt;/p&gt;&lt;p&gt;2 teaspoons dark brown sugar, optional* &lt;/p&gt;&lt;p&gt;1 tbsp chopped garlic &lt;/p&gt;&lt;p&gt;1 tbsp chopped shallots&lt;/p&gt;&lt;p&gt;1/2 teaspoon salt &lt;/p&gt;&lt;p&gt;1/2 teaspoon freshly ground black pepper &lt;/p&gt;&lt;p&gt;2-3 tablespoons olive oil&lt;br /&gt;&lt;br /&gt;Combine all ingredients and blend with a whisk. Add to salad immediately before serving.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Breaded Goat Cheese:&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1 pkg log-style goat cheese&lt;br /&gt;¼ cup pecan panka (just a combo of bread crumbs, pecans, and spices. Mine came from Whole Foods)&lt;br /&gt;&lt;br /&gt;Cut cheese into slices (based on number servings in package. Makes for easier figuring.) Roll cheese in pecan panka. Heat 1 tablespoon olive oil in a nonstick pan on medium heat. Place the crusted cheese in the pan. Add the wine, lemon juice, and remaining butter to the skillet and cook for 2 minutes. Season with salt and pepper and add the pasta, tossing to coat well. Remove from heat and stir in parsley. Dredge beef in flour, shaking off excess and add to hot pan. Working in two batches to prevent overcrowding, brown meat evenly on all sides, about 5 minutes per batch.&lt;br /&gt;&lt;br /&gt;Heat beef broth and wine in a stock pot. Add beef to stock after it is browned.&lt;br /&gt;&lt;br /&gt;Add chopped bacon to the pot. Render bacon 3 to 5 minutes until it begins to crisp. Add carrots, chopped onions and bay leaf. Season with salt and pepper. Cook vegetables 5 minutes until they begin to soften. Add to broth pot. Add fresh thyme.&lt;br /&gt;&lt;br /&gt;Return pan to heat and add 1 tablespoon butter. When butter melts add pearl onions to pan. Sprinkle with sugar and add a little salt. Allow onions to cook until evenly caramelized, light brown, and glazed all over, 10 to 12 minutes. Add to pot with beef and veggies.&lt;br /&gt;&lt;br /&gt;Wipe pan clean and return to heat. Melt 1 tablespoon of butter and add mushroom caps and cook until mushrooms are lightly browned and tender about 10 minutes. Add all citrus zest to mushrooms and season with salt and pepper. Add to beef and veggies. Continue to cook until beef is tender, about 30 minutes (depending on how long it took to complete the steps since you put the beef in the broth).&lt;br /&gt;&lt;br /&gt;In a small skillet over medium heat, melt 3 tablespoons of butter. Add 3 tablespoons of flour and whisk a minute or two to form a roux.  Whisk your roux into the Beef and Burgundy to thicken gravy. Remove bay leaf. Garnish meat and rice with parsley.&lt;br /&gt;&lt;br /&gt;Prepare rice to box directions. Set aside.&lt;br /&gt;&lt;br /&gt;Heat the oil in a large soup pot over a medium-high heat. Add the onion, bell pepper, and zucchini and cook, stirring until the vegetables are tender, about 5 minutes. Add the remaining 2 cups of corn and the broth and bring to a boil. Add the pureed corn and tomatoes and cook until warmed through, but not boiling. Add the salt and season with pepper.&lt;br /&gt;&lt;br /&gt;Note: I think next time I'll add some shredded chicken to add some meat. Season the chicken on both sides with salt and pepper, add to the skillet and cook until browned, about 2 minutes per side. Meanwhile combine the brown sugar, soy sauce, rice vinegar and orange juice in a small bowl and set aside. Add the chicken broth, the soy sauce mixture, and the peaches to the pan. Turn the heat up to high and cook, uncovered, for about 6 minutes, stirring occasionally until the sauce is nicely thickened and the peaches soften. Add the chicken back to the pan with the sauce, turn the heat down to moderate-low, cover and cook for about 5 minutes, or until chicken is cooked through. In the meantime, toast the almonds in a dry skillet over a medium-high heat stirring frequently, until golden brown and fragrant, about 2 minutes. Monterey Jack Cheese, grated&lt;br /&gt;¼ cup crumbled blue cheese&lt;br /&gt;&lt;br /&gt;Place a large pot over medium high heat. Add olive oil. Cook chicken until brown, 5-6 minutes. Add onions, carrots, garlic, paprika, bay leaf, salt and pepper. Cook the veggies until tender, stirring frequently. When tender, add chicken stock and tomatoes and bring to a boil. Simmer while pasta cooks.&lt;br /&gt;&lt;br /&gt;Preheat broiler. Place a large pot of salted water over high heat. Bring to a boil and cook pasta according to pasta directions. Drain when tender.&lt;br /&gt;&lt;br /&gt;Toss the pasta into the chicken chili. Then transfer to a baking dish. Sprinkle cheeses evenly over the top. Thus the name.&lt;/em&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;em&gt;&lt;/em&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;12 oz. jalapeno chicken sausage, halved lengthwise and sliced&lt;br /&gt;6 cups fat-free chicken broth&lt;br /&gt;2 can (14.5 oz) diced tomatoes, undrained &lt;/div&gt;&lt;div&gt;1 cup whole wheat penne&lt;br /&gt;6 cups coarsely chopped kale&lt;br /&gt;2 (16 oz) can navy beans, rinsed and drained&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Heat a large saucepan over medium-high heat. Add sausage and cook 2 minutes, stirring occasionally. Add broth and tomatoes and bring to a boil over high heat. Add pasta. Stir in kale and reduce heat. Simmer until kale and pasta are tender. Set aside. In a large bowl, mix Bisquick, eggs, milk, and Splenda. Add bananas and pecans. Place in hot pan using large silverware spoon. Flip when bubbles begin to form. Lightly dust with powdered sugar.&lt;br /&gt;&lt;br /&gt;*I had to add about 2 tbsp of flour to the mix to get the right consistency, but just this time. Set aside. Sautee garlic, green pepper, and onion in olive oil. In a Dutch oven, add all ingredients except water. Bring to a boil and then reduce heat to low, stirring occasionally. Simmer for 30 minutes, then add water and continue to cook on low for 30 minutes, stirring occasionally. Let cook and put in the refrigerator over night. Before serving the next day, cook for another 30 minutes on low. Remove bay leaves. Slowly add eggs and vanilla until thoroughly combined, then mix in flour, soda, and salt.  Cover and chill dough 2-3 hours.&lt;br /&gt;&lt;br /&gt;Unwrap all Snickers miniatures.  Remove dough from refrigerator.  Divide into tablespoon-size pieces, and flatten.  Place a Snickers miniature in the center of each piece of dough.  Form dough into a ball around the candy. Cover and chill. (20 min only)&lt;br /&gt;&lt;br /&gt;Heat oven 375 deg. Place liners in 2 dozen 3-inch muffin pan cups or grease and flour cups. Into a large bowl, measure all cupcake ingredients except frosting. With mixer at low speed, beat until well mixed, constantly scraping bowl. At high speed, beat 5 minutes, scraping the bowl occasionally. Spoon into muffin pan cups, filling each half full. Bake 20 minutes or until toothpick in center of one comes out clean and dry. Cool in pans on wire racks, 10 minutes, then remove from pans and cool completely on racks. Prepare frosting. Then tip the tops of cupcakes into frosting and turn slightly to coat or put on with a spatula.&lt;br /&gt;&lt;br /&gt;Coffee Cream Cheese Frosting:&lt;br /&gt;6 oz cream cheese, softened&lt;br /&gt;2 tablespoons evaporated milk&lt;br /&gt;1 teaspoon vanilla extract&lt;br /&gt;1/8 teaspoon salt&lt;br /&gt;16 oz confectioners’ sugar&lt;br /&gt;4 teaspoons of instant coffee&lt;br /&gt;&lt;br /&gt;In small bowl with mixer at medium speed, beat together the softened cream cheese and evaporated milk. Bake at 350 deg for 5 minutes.&lt;br /&gt;&lt;br /&gt;Filling:&lt;br /&gt;5 egg yolks&lt;br /&gt;½ cup bourbon, divided&lt;br /&gt;¼ cup sugar&lt;br /&gt;4 cups heavy cream&lt;br /&gt;1 envelope unflavored gelatin&lt;br /&gt;Shaved chocolate&lt;br /&gt;¼ cup cold water&lt;br /&gt;&lt;br /&gt;In one bowl, beat egg yolks until thick and stiff, then slowly beat in sugar. In second bowl, soften gelatin in cold water, and add ½ the bourbon. Mix contents of both bowls in a double boiler over low simmering heat. Constantly stir with whisk until eggs thicken, 8-10 minutes.&lt;br /&gt;&lt;br /&gt;Remove from heat, and stir in remaining bourbon. Allow to cool. Whip cream, and fold ½ into the mixture. Butter a 3 quart casserole dish.&lt;br /&gt;&lt;br /&gt;Melt 2 tbsp of butter in a large skillet over medium-high heat. Add the sausage and break up with a wooden spoon. Cook until it loses most of its pink color, but not so much that it is dry. Add the sausage and the pan drippings to the stuffing cubes.&lt;br /&gt;&lt;br /&gt;Melt the remaining butter in the pan. Add the onion, apple, and salt. Cook intil the vegetables are soft, about 5 minutes. Add the broth and bring to a boil.&lt;br /&gt;&lt;br /&gt;Pour the vegetable mixture over the stuffing cubes and toss until evenly moistened. Mix in the eggs. Loosely pack the dressing into prepared pan and cook uncovered until the top forms a crust, about 40 minutes. Drizzle 2 tbsp melted butter over the top. Drain.&lt;br /&gt;&lt;br /&gt;Melt butter in a large skillet over low heat; stir in sugar, honey, and salt. Add carrots, and cook, stirring constantly, 5 to 8 minutes or until carrots are glazed. Stir pieces of candy canes and peppermint oil into the melted chocolate. Remove from heat, and pour the mixture onto the prepared baking sheet; spread evenly. Chill until firm, 25 to 30 minutes.&lt;br /&gt;&lt;br /&gt;Break into pieces, and serve. Add the chocolate. With a wooden spoon, stir until the chocolate melts and the mixture is smooth, about 5 minutes. Add the butter and stir to melt completely. Add the rum and mix well. Line a baking sheet with waxed paper. Pour the chocolate into the pan, spreading it evenly with a wooden spoon. Let cool completely, then refrigerate until it sets.&lt;br /&gt;&lt;br /&gt;Remove the chocolate from the parchment paper, break it into pieces, and put it in the bowl of an electric mixer fitted with a wire whisk, Beat at low speed for 1 minute, then increase to medium and beat until is it is creamy and smooth. Transfer the mixture to pastry bag without a tip. Pipe out ½ oz truffles, each about the size of a walnut, onto a sheet of parchment paper. Refrigerate for 4 hours.&lt;br /&gt;&lt;br /&gt;Use a four-prong fork to dip into melted chocolate, then tip the truffles onto a sheet of parchment paper. Avoid touching while the set. Turn off the heat and stir in the chopped chocolate. Let stand for 2 minutes then stir well until smooth. Stir in the butter. Pour into the bowl of an electric mixer, and let cool until set.&lt;br /&gt;&lt;br /&gt;Fit mixer with a paddle and beat the chocolate mixture on medium speed until aerated and fluffy, about 2 minutes. Beat in the liqueur and/or other flavorings. Load ganache into a pastry bag fitted with a halfinch plain tube. Line several baking sheet with parchment or waxed paper. Pipe the truffle mixture out to form 1/2-inch balls. Place pans in the refrigerator to chill thoroughly.&lt;br /&gt;&lt;br /&gt;To coat the truffles, set up your counter like this: tray of chilled centers on your left, bowl of melted tempered chocolate in the middle, large pan filled with cocoa powder on your right. (Reverse this if you’re lefthanded) Pick up a truffle with your left hand. Touch the palm of your right hand lightly onto surface of tempered chocolate. Drop the truffle into your chocolaty right hand and roll it around to coat. Move your right hand over the pan of cocoa powder, turn your hand over, and drop the coated truffle into the cocoa. Repeat the process to coat about 5 truffles, then pick up a fork with your clean left hand and use it to roll the truffles round a bit in the cacao. (A second person can help do this continuously.) Repeat until the cocoa pan is filled with a lot of truffles.&lt;br /&gt;&lt;br /&gt;Then wash and dry your hands (or enlist your helper to do this); place the truffles in a strainer and shake it over the pan of cocoa powder to dislodge any excess cocoa. Place finished truffles on another paperlined pan to set completely. Whisk together flour and salt, set aside.&lt;br /&gt;&lt;br /&gt;Combine sugars, peanut butter, and butter in a large bowl and beat with a mixer at medium speed until well combined. Add eggs, 1 at a time, beating well after each. Add vanilla. Gradually add flour mixture to sugar mixture, beating on low speed just until combined.&lt;br /&gt;&lt;br /&gt;Lightly coat hands with cooking spray. Shape dough into 36 balls (about 2 1/2 teaspoons each). Place balls 2 inches apart on baking sheets lined with parchment paper. Press thumb into center of each dough ball, leaving an indentation. Cover and chill 1 hour.&lt;br /&gt;&lt;br /&gt;Preheat oven to 350°. Uncover dough. Bake at 350° for 14 minutes or until lightly browned. Remove cookies from pans, and cool on a wire rack.&lt;br /&gt;&lt;br /&gt;Place preserves in a small microwave-safe bowl, and microwave at HIGH 20 seconds, stirring once. Add juice, stirring until smooth. Cover, reduce heat to low, and simmer for 10 minutes. Break each egg individually into a custard cup and slip into tomato mixture. Cover and simmer 8-10 minutes or until eggs are done. Heat tortillas according to package directions. Remove eggs with slotted spoon. Place tortillas on plates. Let chicken cool. Add rice. Bring to a boil then heat to medium-high and simmer until rice is al dente, about 30 minutes. Add chicken back to broth, adding more water if needed. In a small bowl, beat eggs and lemon juice together. Pour 2 cups of the broth into the bowl of eggs and lemon, whisking continuously. Once all the broth is incorporated, add mixture to pot of chicken soup and stir to blend well throughout. Season with salt and pepper. When crisp, add white wine. Cook and reduce.&lt;br /&gt;&lt;br /&gt;Cook spaghetti per package directions.&lt;br /&gt;&lt;br /&gt;Combine eggs, cheeses, and garlic in a bowl. Beat with a fork.&lt;br /&gt;&lt;br /&gt;Drain pasta and reserve 3/4 cup spaghetti water. Return spaghetti to pot. Add egg mixture and bacon mixture. Salt and pepper to taste. Toss to combine.
